About us

Mimosa is a restaurant in Gdańsk on Bolesława Chrobrego 79B, open since 2023, and a bakery, Mimosa Wajdeloty, on Wajdeloty 17 in Wrzeszcz. In the morning we're a breakfast spot, in the afternoon a restaurant with seasonal Polish and regional cooking. We bake our own bread.

the story of Mimosa

How it started

Mimosa came out of a simple gap. Kamila, the restaurant's owner, loves breakfast – and for years had looked around Gdańsk and Sopot for a place that got it right, that smelled of coffee and matcha, with an interior that invited you to stay. She never found one, so in 2023 she opened it herself on Bolesława Chrobrego 79B.

The name came from two directions at once: the flower, and the cocktail. Both fit – one for the room, the other for the morning table.

In the afternoon the place changes character. That's when the head chef takes over and shows what he likes best: seasonal Polish and regional cooking in a modern, unexpected form.

In 2025 came the bakery. Our artisan breads and sweet bakes met with so much interest that today they're one of the reasons people come to us.

Piotr Ślusarz

Head chef of Mimosa, semi-finalist of the first season of Top Chef and winner of the Young Talent of the Year 2015 title from the Gault & Millau guide.

He gained his experience in Poland and abroad, working in renowned Michelin- starred restaurants including Atelier Amaro, Hibiscus, Pollen Street Social, El Celler de Can Roca and Marcus Wareing at The Berkeley. He also took part in Hell's Kitchen and delivered culinary events at the Sheraton Sopot.

At Mimosa, Piotr sets the direction of the whole culinary side. The evening menu draws on Polish cuisine and familiar flavours, which he interprets in a modern, personal way. His approach is also visible in the breakfasts and in Mimosa's bakery and patisserie – from sourdough bread baked on site to seasonal bakes and desserts.

Piotr also creates menus for events held at Mimosa – from intimate dinners to large events and company gatherings.

Breakfast

This is where it all started, and it's still what we're best known for. Coffee, matcha, eggs, fresh bread straight from our own bakery. No rush, no time limit at the table.

Afternoons and evenings

Polish and regional cooking in a modern form. We draw on Pomeranian and Kashubian tradition, but we're not building a museum piece out of it – we care about how these flavours work today. The menu changes with the season, because there's no point serving in February what's good in July.

Alongside it, wine by the glass and beer from the Pomeranian Brodacz brewery.

Our bakery

We don't buy bread. We bake it ourselves – at Mimosa Wajdeloty, a bakery, bakes and coffee shop on Wajdeloty 17 in Wrzeszcz, open since 2025.

There we make artisan wheat, rye and wheat-rye breads, Japanese shokupan and focaccia. Plus sweet bakes: buns with custard and fruit, open buns with seasonal fruit and sour cream, cinnamon rolls, cream rolls and our own wajdelotki.

You'll find our bakes in two places – at the bakery on Wajdeloty 17 and at the restaurant on Bolesława Chrobrego 79B.

Where our ingredients come from

We check every supplier ourselves. Tomatoes come straight from a farm in Łęgajny in Warmia, eggs and vegetables from local Pomeranian suppliers, and the beer from the Pomeranian Brodacz brewery.

Quality, freshness and seasonality come first. It's not a marketing line – it's why our menu looks different in May than it does in November.

Gdańsk Wrzeszcz

The place

We're on Bolesława Chrobrego 79B in Gdańsk, a few minutes from the Brzeźno beach, close to Polsat Plus Arena, Amber Expo and the Gdańsk Wrzeszcz station.

The room holds 45, and from May to September the garden adds another 25. We have a separate menu for children, and the neighbourhood playground is visible from the garden and the windows. Four parking spaces for guests are waiting at the neighbouring Orlen station.

You can hire the whole space exclusively – we host birthdays, baby showers, hen parties, company dinners and Christmas parties.
